Our hams are cured and smoked in house as is our bacon, sausages, smoked turkey...everything. French bread is baked every morning, sauces, dressings, all housemade. Everything.

We cure, smoke, and dry all of our own meats, using old world methods to achieve modern flavors. Sometimes we run out. If we get a run on ham or corned beef for instance we can't call a supplier, or run to the store, its a ten day process before we can have more ready! Same with our BBQ, it's all smoked out back daily and when its gone its gone until tomorrow! Our Texas style Beef Brisket smokes for over 22 hours, usually ready just in time for lunch! That why it all tastes so good and fresh, because it is!
